Mexican Black Bean and Grilled Chicken Tostada Pizza

Inspired by CPK's Tostada pizza and being creatively hungry, I decided to set out make my own version of the Mexican layered goodness. The Tostada is a pizza with a black bean spread, topped with grilled chicken and smothered with cheese. After being cooked to perfection, layer it up with shredded lettuce, diced tomatoes and garnish with green onion. Drizzle on some of the salsa-ranch dressing and bam!! Salsa-Ranch Side Sauce
Create the Pizza: Using a non-stick pan place it on your burner and set to medium heat. Clean the chicken breast and season both sides black pepper and salt. Start grilling the chicken. You can skip this step if you have pre-cooked grilled chicken strips or left overs like I did. While the chicken is cooking begin preparing the other ingredients. For time management, start the next steps when the chicken is half way cooked. Set your oven to 450°F. If you are using fresh pizza dough, stretch it out over parchment paper using flour to make sure it doesn't stick. Once the dough is stretched to your desired size and thickness, cook it for about 7 mins or until it is light golden brown. If you are using the Boboli crust, you do not need to pre heat the oven and can move onto the next step. In a blender or food processor, mix in the can of black beans (drained), garlic, salsa, cilantro and hot sauce. Season it with black pepper and salt to taste, then blend it until it is relatively smooth. Take a butter knife or spoon and spread the black bean mixture over the pizza crust, then cover it with the shredded Cheddar. Take the grilled chicken and cut it into small pieces. Top the pizza with the chicken and place the pizza back into the oven. I use a perforated baking pan which gives a nice crust but you could use tin foil or go straight onto the racks. Make the Salsa Ranch sauce: While the pizza is cooking, begin prepping the toppings and Salsa-Ranch sauce. Shred the lettuce, dice the tomatoes and chop the green onion. In a small bowl mix up the sour cream, salsa, ranch and hot sauce. Set aside for later. After the cheese begins to bubble up, take the pizza out of the oven and place on a large plate. Cover the pizza with the shredded lettuce, diced tomato and some green onion. Using a fork or spoon drizzle the Salsa-ranch sauce over the pizza. Then enjoy!!
